- anchovy fillets2
- garlic clove1
- egg yolk1
- lemon, juice1
- Dijon1 tsp
- olive oil1/3 cup
- Parmesan, grated1/2 cup
- croutons2 cups
Method

Mash anchovy and garlic with salt. Yolk, lemon, Dijon. Whisk in oil.

Toss romaine with most of the dressing and half the Parm.

Croutons, more Parm, black pepper. Add grilled chicken if it is dinner.
