Crisp duck breast
The cook is rendering fat, not searing meat. Start in a cold pan, skin down, and be patient.

- duck breasts, skin on2 (2 lb)
- kosher salt1 tsp

Method

Score the skin in a crosshatch, not into the meat. Salt both sides. Cold skillet, skin down, medium heat.

Render 8–12 minutes until the skin is deep gold and most of the fat has pooled. Pour off fat as it gathers — save it.

Flip 1–2 minutes to 130°F for medium-rare. Rest 8 minutes. Slice across.
If you don’t have it
- Duck breast → A thick chicken thigh, skin on — only if you must. Not the same. Duck is a steak. Chicken thigh still wants 185.
- Cast iron → A carbon-steel pan. Nonstick will not render the skin properly.
Same cook, different day
Orange pan sauce
A classic plate. After the sear, pour off fat, deglaze with a little stock and orange, mount butter. Spoon over slices.
Smoke then sear
The pellet is on. 200°F to 115, then skin-down in a pan to finish the render.
Magret, extra-rare
A fat-cap breast from a Moulard. Pull 125. The fat still needs a full render first.

- With this dish, try making petite roasted potatoes.
Same pan as a roast or chicken. Or a sheet next to chops. Halve, oil, salt, rosemary. 425°F cut-side down until the faces brown. Toss in the meat drippings at the end.

When the meat comes off to rest. Thick spears, oil, salt. Hot grate 2–3 minutes, roll, another minute. Lemon. Pencil spears go in a hot skillet, not on the bars.

- With this dish, try making vinegar slaw.
Anytime. Better after an hour in the fridge. Cabbage, carrot, cider vinegar, a pinch of sugar, salt, pepper. No mayo if the meat is already rich.
