Sausage, onions, petite potatoes

A skillet or a two-zone grill: browned links, sweet onions, petites that pick up the fat. This is the plate you make when you already bought good sausage.

Ingredients

2 lb on the fire · ~1.4 lb to the table · 3 plates at 8 oz

  • fresh bratwurst or smoked sausage2 lb
  • petite potatoes, halved1.5 lb
  • large onions, sliced2
  • oil or lard2 tbsp
  • kosher salt1 tsp
  • black pepper1 tsp
  • mustard seed or a spoon of mustard at the table1 tsp

Method

    Petites in a skillet or on a sheet, oil, salt, 400–425°F until they start to brown, 15 minutes.

    Onions in with the potatoes. Stir so they wilt and pick up color, another 10.

  3. 3

    Sausage on the cool zone of the grill, or nestled into the pan. Fresh links to 160°F; smoked links just need a deep brown. 12–18 minutes, turning.

    Pile onions and potatoes. Sausage on top, split if you want mustard in the cut. Do not boil the brats in beer first — you paid for the fat.

If you don’t have it

  • BratwurstItalian sausage or kielbasa. Fresh links to 160°F. Smoked links just need color.
  • PetitesSliced russets. They crisp more. Stir so they do not glue to the pan.
  • Yellow onionA mix of onion and sweet pepper. Still a skillet, not a stir-fry. Let them take color.

  • Beer pan

    You insist. A splash of beer with the onions after they brown — not a boil of the sausage.

  • Mustard-heavy

    A ballpark plate. Same cook. Grain mustard at the table. Sauerkraut on the side if you have it.
