Oven ribs, then broil

No smoker, still a rack. Tight foil until tender, then a hard glaze under the broiler — the pin that lives on every weeknight board.

Ingredients

4 lb on the fire · ~2.2 lb to the table · 4 plates at 8 oz

  • baby backs or St. Louis spares1 rack (4 lb)
  • yellow mustard2 tbsp
  • rib rub (brown sugar, paprika, salt, pepper, garlic)1/4 cup
  • barbecue sauce1/3 cup
  • apple cider vinegar2 tbsp

Method

    Peel the membrane. Mustard binder, then rub. Wrap the rack tightly in foil with a splash of vinegar.

    Bake at 300°F until a probe slides between the bones, 2–2½ hours for baby backs, closer to 3 for spares.

    Unwrap. Sauce. Broil 4–6 minutes a side until the glaze bubbles and the edges catch.

    Rest 10 minutes. The bend test still applies — a 90-degree arc is done.

If you don’t have it

  • Baby backsSt. Louis spares. Add 30–45 minutes in the foil. Same glaze.
  • Broiler glazeA ripping grill, 2 minutes a side. Better char if the weather allows.

Same cook, different day

  • Dry finish

    No sauce. Skip the glaze. Dust more rub after the foil comes off, then a 5-minute broil.

  • Liquid smoke

    You miss the pit. Two drops in the foil, not a teaspoon. Easy to ruin.

  • Sheet-pan only

    No foil wrap. Cover the pan tightly. Same 300°F. Less steamed, a little drier.

On the plate

With this, try

  • With this dish, try making pinto beans.

    Start when a packer wraps, or at the beginning of a shoulder. Soaked beans, smoked hock, onion, chili. Simmer until creamy. Salt late.

    Anytime. Better after an hour in the fridge. Cabbage, carrot, cider vinegar, a pinch of sugar, salt, pepper. No mayo if the meat is already rich.

    In the oven while a roast rests, or the last stretch of a smoke. A real béchamel, cheddar, a breadcrumb top. Do not start it at the same time as a packer and expect timing to match.
