Fried-chicken heat without a fryer: a cayenne-lard mop over seared thighs. The pin that burns twice.

Ingredients
3 lb on the fire · ~2.1 lb to the table · 4 plates at 8 oz
- bone-in, skin-on chicken thighs8 (3 lb)
- kosher salt2 tsp
- buttermilk1 cup
- flour, seasoned with salt and pepper1 cup
- lard, oil, or the rendered chicken fat1/2 cup
- cayenne2 tbsp
- brown sugar1 tbsp
- paprika1 tsp
- garlic powder1/2 tsp
Method

Salt the thighs. Buttermilk 30 minutes to overnight. Dredge in seasoned flour.

Shallow-fry in a 350°F skillet, skin-side down first, until 175°F and the crust is brown, 6–8 minutes a side.

Stir cayenne, sugar, paprika, garlic into 1/3 cup of the hot fat. Paint the crust. It should shine and sting.

Pickles and white bread. The heat blooms for a minute after you mop — do not double-paint on the first pass.
If you don’t have it
- Thighs → Wings or tenders. Same dredge, shorter fry, same mop.
- Lard mop → The frying fat plus cayenne. That is the authentic move. Do not use cold butter.

Mild
Not everyone wants to suffer. Half the cayenne, same sugar. Serve extra mop on the side.
Smoked then mopped
The pit is on. Smoke to 165, crisp in iron, then the cayenne fat.

Lunch. White bread, pickles, a second slice to catch the oil.
On the plate

While the meat rests. Waxy potatoes, salt in the water, mustard-mayo, pickle, celery. Fold when the potatoes are still warm.
