Lamb chops, roasted potatoes

Loin chops, hot and fast, petites that already took 30 minutes of oven, asparagus in the rest. The lamb is pink. The potato is brown.

Ingredients

3 lb on the fire · ~2 lb to the table · 4 plates at 8 oz

  • lamb loin chops, 1½ inches8 (3 lb)
  • kosher salt2 tsp
  • black pepper1 tsp
  • garlic cloves, smashed4
  • petite potatoes, halved1.5 lb
  • asparagus1 lb
  • oil2 tbsp
  • lemon1

Method

    Salt the chops. Toss petites with oil, salt, and smashed garlic. 425°F, cut-side down, 25–35 minutes until the faces brown.

    Hot grate or skillet. Chops 3–4 minutes a side to 128–130°F. Fat edge rendered on the bars.

    Asparagus on the grate 2–3 minutes while the chops rest 6 minutes.

    Potatoes on the plate, chops on the potatoes, asparagus, lemon. Mint sauce if you must — after, not in the pan.

If you don’t have it

  • Loin chopsRib chops (lollipops). Same sear. Shoulder chops want the braise, not this grate.
  • PetitesFingerlings or halved Yukons. Cut-side down. Same 425°F.
  • AsparagusBlistered green beans. Rest window. Same oil and salt.

  • Garlic-herb butter

    You want a finish. Butter, garlic, rosemary in the rest. Spoon over the chops, not the potatoes.

  • Cast-iron only

    No grill. Smoking skillet. Vent. Same 130°F pull.
