Ingredients

1.5 lb on the fire · ~1.2 lb to the table · 2 plates at 8 oz

  • sirloin flap (bavette)1 1/2 lb
  • kosher salt2 tsp
  • black pepper1 tsp
  • oil1 tbsp

Method

    Salt 30–45 minutes ahead. Pat dry.

    Hottest grate. 3–5 minutes a side to 128–132°F. Stay present — it is thin in spots.

    Rest 8 minutes. The grain is obvious. Slice hard across it, thin.

If you don’t have it

  • BavetteOutside skirt or flank. Same ripping grate, same across-the-grain slice.
  • SaltA 30-minute chimichurri wipe. Wipe, do not soak. The crust still needs to form.

Same cook, different day

  • Asada

    Tacos. Lime, garlic, a little oil. 3 minutes a side. Chop, not slice.

  • Cast iron

    No grill. Smoking pan, 3 minutes a side. Vent on.
