Pepper-crusted beef tenderloin
The mildest beef cut, treated like a roast: salt ahead, roast gentle, rest, then a brief high-heat finish if you want more crust.

Ingredients

- center-cut beef tenderloin, tied4 lb
- kosher salt1 tbsp

Method

Salt the tied roast 12–24 hours ahead, uncovered. Coat with pepper and oil before it goes in.

Roast at 275°F on a rack until 120°F in the center for rare-to-medium-rare, 40–60 minutes.

Rest 10 minutes. Meanwhile heat a skillet until very hot. Sear all sides 45 seconds with butter, garlic, and thyme.

Rest another 5 minutes, then slice into ¾-inch medals.
If you don’t have it
- Center-cut tenderloin → Strip roast or a small prime rib. Strip has more flavor and more fat. Same reverse-sear logic, pull 125–128.
- Pepper crust → Herbes de Provence or just salt. Pepper is classic because the cut is mild. Do not bury it in a wet marinade.
- Oven reverse → Pellet smoker at 250 then a pan sear. A little oak is welcome. This cut cannot take heavy smoke.
Same cook, different day
Bacon-wrapped
You want insurance against dryness. Wrap after salting. Reverse at 275, sear briefly. Bacon is the crust.
Individual filets
Two people, not a roast. Same reverse-sear as a thick steak. 250 to 115, sear, rest to 125.
Holiday board
Buffet service. Roast to 120, rest 20 minutes, slice, and serve with horseradish. Hold slices in juices, not under a lamp.

In the oven the last 70 minutes of a roast, or while steaks reverse. Yukon Golds, ⅛-inch, layered with cream, garlic, salt, Gruyère. 350°F until a knife meets no fight, then a brief broil.

When the meat comes off to rest. Thick spears, oil, salt. Hot grate 2–3 minutes, roll, another minute. Lemon. Pencil spears go in a hot skillet, not on the bars.

In the oven when a reverse-sear steak goes on, or the last hour of a roast. Scrub, oil, salt the skin. 400°F until a probe slides, 50–70 minutes. Split, butter, sour cream, chives. Foil only if you like wet skin.
