Grilled rack of lamb

Ingredients
2 lb on the fire · ~1.3 lb to the table · 3 plates at 8 oz
- racks of lamb, frenched, 1½–2 lb each2 (2 lb)
- kosher salt2 tsp
- black pepper1 tsp
- Dijon1 tbsp
- chopped rosemary1 tsp
Method

Salt the racks. A thin smear of Dijon and rosemary is optional, not a crust to burn.

Indirect 250–275°F to 115°F. Then sear the fat cap 60–90 seconds over direct heat.

Rest 8 minutes to 130. Slice into chops. Do not sauce them.
If you don’t have it
- Frenched rack → Unfrenched, or loin chops. Loin chops are the weeknight version already in the library. Unfrenched just means more fat to render.
- Dijon-rosemary → Salt only. Mustard can scorch on a hard sear. A thin smear, or none.

A dining-room rack. Reverse to 115, press herbs, then a brief fat-cap sear.
Cast-iron rack
No grill. 250°F oven to 115, then fat-cap in iron.
Single rack
Two people. Same temps, 10 minutes less. Still rest.

Next to lamb, chicken, or a grilled steak. When the tomatoes are ripe. Big chunks, not a mince. Oil, red wine vinegar, oregano. Feta in a slab, not crumbled to dust.

When the meat comes off to rest. Thick spears, oil, salt. Hot grate 2–3 minutes, roll, another minute. Lemon. Pencil spears go in a hot skillet, not on the bars.

- With this dish, try making grilled onions.
Alongside a tri-tip or skirt. Thick rounds, oil, salt, the cool then hot zone until soft and marked.
