Spritz and wrap
A light mist keeps bark from turning to jerky. It is seasoning maintenance, not a bath.
When: After the first 2 hours on ribs, shoulder, and sometimes brisket, only when the surface looks dry.
Steps

Apple juice, cider vinegar, or straight water in a spray bottle. A little Worcestershire on beef is fine.

Two or three passes from a foot away. The surface should glisten, not pool.

Close the lid. You just spent heat.
- 4
Stop spritzing once you wrap, or if the bark is already where you want it.
Common mistakes
- Spritzing from the first hour and washing the rub off.
- Sweet colas on a long cook. They burn.
