Texas crutch
Wrap in butcher paper or foil to push through the stall. Speed and moisture in exchange for a slightly softer bark.
When: When bark is already dark and firm, and you still have 40–50°F of internal temperature to climb.
Steps

Judge bark with a finger, not the clock. It should not smear.

Peach butcher paper breathes and protects bark. Foil is faster and wetter — use it when you are late.

Wrap tight. Loose paper is just a tent.

Return to the same cooker temp. Start probing for tenderness 45 minutes later.
Common mistakes
- Wrapping a pale brisket at 150°F because a blog said to. You will steam the bark off.
- Adding a cup of liquid to foil on a brisket and turning it into pot roast.

- Foil when you are late. A little liquid in foil is a braise — use it only if you want that.

- Bark must already be set. Wrapping a pale brisket steams the crust off.
