Pork schnitzel

A pounded loin cutlet, breadcrumbs, hot fat, lemon. Four minutes. Do not make it thick.

Ingredients

3 lb on the fire · ~2.1 lb to the table · 4 plates at 8 oz

  • loin cutlets, pounded ¼ inch4 (3 lb)
  • flour1 cup
  • eggs2
  • breadcrumbs1½ cups
  • for shallow fryoil or lard
  • lemon1
  • to tastesalt

Method

    Salt. Flour, egg, crumbs. Rest 5.

    Hot fat, 2 minutes a side until blond. Drain. Lemon.

    If it puffs, the fat is right. If it soaks, the fat was cold.

If you don’t have it
