Garlic-herb lamb lollipops

Frenched rib chops, a hot grate, 130°F. The dinner-party chop that cooks in the time it takes to set the table.

Ingredients

2 lb on the fire · ~1.3 lb to the table · 3 plates at 8 oz

  • lamb rib chops, frenched8 (2 lb)
  • kosher salt1½ tsp
  • olive oil2 tbsp
  • garlic cloves, grated3
  • chopped rosemary1 tbsp
  • black pepper1 tsp
  • lemon1

Method

  1. 1

    Mix oil, garlic, rosemary, pepper. Coat the chops 20–40 minutes. Salt just before the fire.

    Ripping two-zone fire. Sear 2 minutes a side, including the fat edge standing up. Pull 125–130°F.

    Rest 6. Lemon on the board. Do not walk them to 140 — they dry like a cheap steak.

If you don’t have it

  • Rib chopsLoin chops. Thicker. Sear, then a minute on the cool side.
  • GrillCast iron. Same 2 minutes a side. Render the fat edge standing up.

Same cook, different day

  • Whole rack

    A table of four. Reverse at 250 to 115, then a hard sear. Same garlic-herb.

  • Mint sauce

    The old way. Vinegar, mint, a pinch of sugar. Not jelly from a jar if you can help it.

  • Cumin-chili

    Less rosemary. Salt, cumin, chili. Lemon at the board.
