Ingredients

1.5 lb on the fire · ~1.2 lb to the table · 2 plates at 8 oz

  • flat iron steak1 1/2 lb
  • kosher salt1.5 tsp
  • black pepper1 tsp
  • oil or tallow1 tbsp

Method

    Salt 20–40 minutes. Pat dry. Heat a skillet until a drop of water skitters.

    Oil the steak, not a cold pan. Sear 3 minutes, flip, 3 minutes more, to 128–130°F.

    Rest 6 minutes. Slice across the grain — even a tender chuck steak has a direction.

If you don’t have it

  • Flat ironRanch steak or a thin sirloin. Ranch is leaner. Sirloin is the grocery fallback. Flat iron should already have the silver skin out.
  • SkilletHot grill. Same times. The apartment version is iron.

Same cook, different day

  • Garlic-herb butter

    A nicer Tuesday. Sear, rest, butter and herbs on the board. Not in the screaming pan.

  • Fajita iron

    Sliced meat. Grill whole, rest, slice, 60 seconds in a hot pan with peppers.

  • Marinated

    You bought a thick one. A 2-hour oil-garlic soak, wiped dry before the pan. Acid overnight will mush the surface.
