- russet potatoes, peeled, cubed2 lb
- onion, diced1
- chicken stock3 cups
- milk or cream1 cup
- cheddar, grated1.5 cups
- kosher salt2 tsp
- to finishscallion, sour cream

Bacon until crisp. Out. Onion in the fat.

Potatoes, stock. Simmer until they give, 15 minutes. Mash some against the pot so it thickens. Leave chunks.
