Rubs and sauces

Reusable, not copy-pasted into every recipe. Make a jar. Salt-and-pepper is still the house.

Salt, pepper, garlic

Texas. The house rub. Coarse, not dusty.

  • coarse kosher salt1/4 cup
  • coarse black pepper1/4 cup
  • granulated garlic (optional)1 tbsp

Equal parts salt and pepper by volume for a packer. Less pepper on a steak if you want. Binder optional.

Memphis dust

Paprika, brown sugar, no sauce required.

  • paprika1/4 cup
  • brown sugar2 tbsp
  • kosher salt1 tbsp
  • black pepper1 tbsp
  • chili powder1 tsp
  • garlic powder1 tsp
  • onion powder1 tsp

Coat the rack. Dust again after the cook if you are running dry ribs.

Poultry salt

Salt first. Herbs later so they do not scorch.

  • kosher salt2 tbsp
  • black pepper1 tsp
  • paprika1 tsp
  • garlic powder1/2 tsp

Salt the bird uncovered in the fridge. Pepper and paprika just before the fire.

Coffee chuck rub

Bitter-sweet crust for a poor man’s brisket.

  • fine ground coffee2 tbsp
  • brown sugar2 tbsp
  • kosher salt1 tbsp
  • black pepper1 tbsp
  • paprika1 tsp

On chuck or the point. Sugar will darken — watch it past 300°F.

Texas thin

A mop, not a blanket. Vinegar, mustard, a little ketchup.

  • apple cider vinegar1/2 cup
  • water1/4 cup
  • yellow mustard2 tbsp
  • ketchup2 tbsp
  • Worcestershire1 tsp
  • to tastehot sauce

Warm it. Brush on slices or a chopped tray. Never in the first half of a packer.

Kansas City glaze

Sweet, sticky, last 20 minutes only.

  • ketchup1 cup
  • brown sugar1/4 cup
  • apple cider vinegar2 tbsp
  • molasses1 tbsp
  • chili powder1 tsp

Simmer 10 minutes. Thin coat, set, second coat if you must. Sugar burns on a long unwrapped cook.

Alabama white

Mayo, vinegar, pepper. On smoked bird, not a brisket.

  • mayonnaise1 cup
  • apple cider vinegar1/4 cup
  • black pepper1 tbsp
  • kosher salt1 tsp
  • prepared horseradish (optional)1 tsp

Whisk. Dress the bird after it comes off, or serve in a bowl. It will break on a hot grate.

Chimichurri

Parsley, garlic, oil, vinegar. The right sauce for grainy steaks.

  • parsley1 packed cup
  • garlic cloves3
  • olive oil1/2 cup
  • red wine vinegar2 tbsp
  • kosher salt1 tsp
  • to tastered pepper flake

Chop by hand if you can. Make it an hour ahead. Spoon over sliced steak, not before the fire.

Vinegar mop

Eastern Carolina. Thin, hot, for pork.

  • apple cider vinegar1 cup
  • red pepper flake1 tbsp
  • brown sugar1 tbsp
  • kosher salt1 tsp
  • black pepper1 tsp

Mop after the first two hours, lightly. Serve extra at the table on pulled pork.
